This washed pacamara is a true delicacy and a very versatile coffee. As an espresso it delivers a dense syrupy sweet shot while as a pour over a wider spectrum of sweet notes can be enjoyed in a heavy body cup.
Mileydi is located in the Alotepec mountain range in Chalatenango. The farm is protected by large hills, which form the border with Honduras. The coffee grows on steep terrain with clay-heavy soil, surrounded by mixture of colpachi and pine trees. Ever Diaz owns Mileydi and grows grows pacamara and pacas varieties which both thrive in high altitude, cool climates.Like most producers Ever fights constantly climate change and leaf rust but as he says with lots of love and attention, he is seeing his farm improve year over year.
Ever is a small producer who transitioned to coffee production early 2000. His coffee quality has been endorsed several times by winning Best of Project Origin in 2016 and 2017, and being among the top five in Cup of Excellence in 2018.
