We’re excited to present our fourth year of coffee from La Divina, a renowned farm operated by Roberto Ulloa, a fourth-generation coffee producer with deep technical expertise and a passion for quality.
This SL28 boasts a remarkably clean profile with a smooth, sweet brew. Expect a black tea-like body complemented by caramelized sugar notes, reminiscent of bonbon. Subtle layers of fig jam emerge, with a low-acid fruitiness that adds complexity without overwhelming the cup.
Washed coffees like this SL28 offer a pure expression of the bean, unmasked by processing techniques, allowing the intrinsic qualities of the single-origin coffee to shine through.
While versatile enough for pour-overs (we recommend a 16:1 water-to-coffee ratio), this SL28 shines as an espresso. Its dense, full body and rich caramel sweetness, combined with almost no acidity, create an unforgettable shot. We use a 19.5g dose for double shots, with a slightly coarser grind due to the density of the beans compared to varietals like Bourbon.
