The combination of an anaerobic pacamara and a bourbon natural results in a multiverse of chocolate flavours. Heavy notes of gooey brownies and rich chocolate covered fruit radiate from this coffee regardless of brewing method.
High altitude pacamaras are known to be dense and full bodied, with a great reputation in terms of flavor in the specialty coffee world. To have them processed anaerobically is remarkable and offers us a whole new flavour spectrum to relate to.
Once combined with a carefully profiled natural bourbon from La Divina, aroma fills the space as if cooking chocolate brownies. Flavors revolve around an overall coat like chocolate fudge with layers of caramel, and light caramelized cinnamon.
This coffee has been crafted to work for a wide palette of preferences, for espresso we recommend 18g for double shot (25 sec) , V60 delivers a full bodied cup, while Chemex or Clever will make a more medium mild bodied cup.
