Mileydi is a small farm located at 1,800MASL in the Alotepec mountain range in Chalatenango. Ever’s pacamara won the best of Project Origin in 2016 and 2017, and his coffee quality was endorsed once again in 2018 by being among the top five in Cup of Excellence with 90 points. Mileydi is on a steep terrain hence all coffee is harvested by hand and transported on horseback. The coffee is processed on site and dried on raised beds or on a patio adjacent to Ever’s family home. Like most producers Ever fights constantly climate change and leaf rust but as he says with lots of love and attention, he is seeing his farm improve year over year.
This washed pacamara was dried on patios and raised drying tables for 18 days.
