Las Ranas is a section within the greater San Francisco farm. With the perfect conditions provided by the altitude and terroir, Jose grows a mix of dwarf bourbon and bourbon elite. The producer is innovative in ways of processing and farming. Coffee is separated by days of picking and they experiment with different processes, fermentation and drying techniques.
This coffee is naturally processed, also known as dry process. After picking the cherries are spread on a thin layer on raised drying tables which allows proper airflow and the cherries are moved regularly ensure evenly dried cherries. It takes about 3-4 weeks for the cherries to be completely dried using this processing method. Once the coffee is dried, the outer husk is removed mechanically. Natural processing adds fruity notes to the coffee.
