Cascara is the skin of the coffee cherry fruit and once dehydrated it can be brewed as loose-leaf tea.
When Cascara comes from delicate coffee varietals meticulously dried and processed great things happen.
Cascara health benefits are numerous. Cascara is considered as superfood due to its high concentration of polyphenols. It is also rich in potassium, helps to boost immune system, is packed with antioxidants, and has anti-inflammatory properties. It is also discovered that cascara produces a protein essential for maintaining healthy cognition, and other brain-related processes such as mood and sleep.
This dry processed cascara comes from naturally processed coffees from Calera farm. After picking the cherries are rinsed and the coffee is then sundried slowly over a period of 6-8 weeks on raised beds. After the drying period, the cherries undergo dry milling to separate the coffee beans from the husk (cascara). This is an alternative way compared to collecting the cascara after pulping the coffee in the wet milling machines and then laying it out to dry. As a result of the dry processing, the cascara has more flavor vs. the wet processed cascara. Everything is hand sorted and only fully ripe cherries are used.
